CHICKEN DINNER
Chicken pieces (whole chicken cut up or whatever you like)
2 cans whole potatoes
2 cans yams
Fresh mushrooms
1 onion
Oregano
Garlic powder
1 bottle Zesty Italian dressing
In a large roasting pan, place chicken pieces. Drain potatoes and yams, and put in and around chicken. Add mushrooms and sliced onion. Sprinkle with oregano and garlic. Pour 1 bottle of dressing over everything. Bake uncovered at 375 degrees for 1 1/2 hours.

CHICKEN BREASTS SUPREME
6-8 boneless chicken breasts
6-8 slices bacon
1 jar dried beef- 8 oz (chopped)
1 can cream of mushroom soup
1 (4 oz.) can mushroom stems and pieces (drained)-optional
1/2 c. sour cream
Parsley- optional (gives a nice pretty effect)
Wrap chicken breasts in bacon slices. Sprinkle the chopped dried beef into a baking pan. Arrange chicken breasts on dried beef. Combine remaining ingredients. Pour over the chicken. Sprinkle parsley on top. Bake at 250 degrees for 1 1/2 hours or until tender. Serve gravy over white rice, baked or mashed potatoes or noodles. Serves 6.
Note: I wash the dried beef in warm water and then drain, to take away the saltiness. This dish is not greasy at all inspite of the bacon. Very delicious.

I make chicken a lot of different ways, however, when I want to eat healthy, I'd like to cook Oprah's former chef's recipe. You will need: 4-6 boneless breasts, plain yogurt (not vanilla nor any other flavor), 2 pans for dredging chicken,(1 for yogurt/1 for breadcrumbs), plain bread crumbs, salt, pepper (to taste). Preheat oven to 350 degrees. Season chicken to taste, place in yogurt, then in breadcrumbs, bake at 350 degrees in an ungreased pan until golden brown or until cooked thoroughly. This is a very good chicken recipe. Tip....if you use seasoned breadcrumbs, consider the amount of salt you use to avoid salty chicken. ENJOY!!!

I only eat chicken, as far as meat, so I have alot of really good, and different recipes, but I like chopped up chicken breast bite size, mixed in with pasta, and any number of sauces... easy and delicious. I prefer peanut sauce, one of my favorites, I use house of padang. I also make super spicy chicken, and top it with a butter-kayro syrup-and-garlic sauce, a delicious contrast. (I do that over pasta too)

I'm Mexican so I like my chicken in homemade red chili. I boil my chicken parts, mostly leg quarters, and use the broth to make my chili ( oil in pan, heat, add flour to thicken, add a broth and chili mixture, stir) add your chicken. I make it with Spanish rice and refried beans. Spanish rice is not hard to make. Buy some goya seasoning and add it to your broth w/salt and pepper. Toast your rice a bit in a pan with oil then add the broth. Stir a couple of times and let it steam. Add just a touch of cilantro- gives it better flavor.

Sauteed chicken breast seasoned with basil, garlic and a little celery salt simmered in slices of tomatoes. It's best with home made Fettuccine Alfredo and garlic cheese bread sticks.
