You will be telling them goodbye. You always need to list past employment even if there were problems with your employment there. You have a chance to explain it and paint yourself in the best possible light. Most past employers will only give brief and very vague references because they are concerned with past employees suing them.

If you're not willing to give up a job reference that's saying that you have something to hide. If they can't check employment reference then they will not be able to verify if you're reliable when it comes to working. That is not a good idea if you really want this job. Even if you think your last job won't give you a good reference be prepared to dispute what they say to defend yourself.
