My friend makes this knockoff beef stroganoff with ground beef.
She sautees up about 1/2 an onion, about 1/2 a container of mushrooms. Then she adds 1 pack of hamburger and let's this brown. She seasons with salt and pepper. Then she adds 1 can of cream of mushroom soup and 1/2 can of water. She let's this simmer for about 5 minutes. Once this is all done she add's about 1/2 container of sour cream. I think it needs more salt, but that's up to you. She pours this over egg noodles. It pretty good, the kids love it and she's done in less than a half hour.
One thing that I make is we called minced beef as a child. Sautee up 1/2 and onion, about 1/4 of a pepper, and 2 cloves of garlic, all diced. Season with salt and pepper. Once they are soft add 1 pack of ground beef. Let this brown up. Then add enough water to almost cover the ground beef and 1/4 c. of ketchup. Let this simmer down on low until the sauce gets thick, generally it takes about 20 minutes. I like to add a sprig of thyme and a bay leaf while the meat is simmering. You can serve it over rice or on a hamburger bun like sloppy joes.

Sloppy Joe Casserole
1 lb. ground meat
1 can sloppy joe sauce
1 can mushrooms
1 package sweet cornbread mix
- Plus the ingredients needed to prepare the cornbread mix
Shredded cheese
Brown the meat and drain. Stir in sloppy joe sauce and mushrooms.
Pour meat mixture in an 8" square glass baking dish.
Prepare cornbread mix as directed. Pour on top of meat mixture.
Bake according to the directions on the cornbread mix. About 5 minutes before its done baking, top with your favorite kind of shredded cheese and then finish baking.
Its great served with corn on the side. My kids are 7, 5, & 3 and they absolutely love this meal! Plus its easy to make and very quick for a weeknight meal.
If you're feeding more than 2 adults and 2 or 3 kids, you'll want to double the recipe. My husband always goes back for seconds when I make this plus it makes a great leftover so you may want to double the recipe anyway.

Meatballs for either spaghetti or meatball grinders.
Stuffed bell peppers.
Chili
Pizza topping
Manicotti
Lasagna
Cottage pie (Thought of usually as shepard's pie, but that's the one made with lamb.)
I find if difficult to come up with uses for ground beef as well. Hope I helped a bit.
