NROTC produces SWOs and Aviators ONLY. SAR swimmer and diver are enlisted ratings. Closest you could get would be being lucky enough to be assigned to rotary aircraft (think that Coast Guard Movie with Kevin Costner) as a Pilot trainee.

you write down your top three choices and shortly before you graduate you are told which community you are going into. If you pass the Aviation Pre screen, you may get assigned to Aviation, but you will not know which aircraft you get until just before you finish the initial training pipeline.

Last question first, yes you do get choices of your career and to the degree you want to get.
You have to be an Officer to be a Pilot in Air Force. Any BS degree would help.
A pararescuman is usually a Court Guard function and an enlisted man's career.
A Navy SAR swimmer or diver is usually an enlisted man's career.
Go to a college near you and talk to the ROTC department. Does not matter which service.

You may want to check into some of those jobs. Some may be for enlisted only and also not for Reserve Officers. In the Military, you get placed where they need you. If you have a specific idea in mind, they may help you get what you want. Usually the type of degree doesn't matter, unless you want to be something specific like a Doctor, Nurse, JAG etc... If you want to be an AF pilot, I suggest you look into going to the Air Force Academy.
