Your hair grows in one direction, for a Beard, its usually downward, You can get a closer shave going against the grain(Upward), but you can also irritate your skin.......#####

with the grain is to draw the blade in the same direction that the hair lies in. Against the grain would be in the opposite direction.

I usually shave against the grain in order to slide the blade up underneath the lay of the stubble.

It means to shave in the direction the hair grows. For legs, you want to start at the ankles and work your way up. For the face, I'm not so sure.
