will any of those cards let me play nfs prostreet MAXED?

The NVIDIA GeFORCE 8600GT is your best bet, as it will take longer to be obsolete and take longer to disappear from games "Supported video card" list.
As for the game, EA has yet to release the system requirements for the game as it's still a future release and most video game publishers will not release the system requirements for a future release (even if "future" means tomorrow).
You will note, however, that video cards with lower model numbers vanish from supported card lists before those with higher. Aim high!

Umm, the 8600GT is a midrange card, and in fact it is actually not even that great of a midrange card, so I am not sure what the whole "aim high" thing was about. Neither of those two will let you play Prostreet maxed, no way. Sorry to disapoint, but that is the truth.
