If you had lied about a reason as to why you couldn't work you would have been in the same league as Mindy.
You will always be asked to work when you don't want to for someone you feel is getting special treatment and a slacker. I have no idea if this is reality, but it is your reality and that's what is important.
Don't complain or whine - do what you agreed to do and do it with a smile. When you need off you can remind Mindy and the boss how you worked for her and were a team player. But, if this is an ongoing problem you need to talk to your supervisor about how you feel. You may also need to find another position with a different supervisor.

Well, you look good because you're being a team player and Mindy looks bad because she isn't. If you think she's taking off early and it's not her son's birthday, then keep track of her excuses, I'm sure she'll use it again on the wrong day and you can then use that against her. Besides, you're only staying an hour and a half extra and it should be overtime so you come out on top. Don't be mad, just be ready to use this and other episodes for the future.

The only person more despised than the office slacker who's constantly ducking out is the person who constantly complains about everyone else getting special treatment.
If your boss asks you to stay late or come in on your day off, say you have plans and leave it at that.
If it upsets you so much, don't volunteer for this. If you feel Mindy is really taking advantage of the situation or has other problems you need to speak to her supervisor privately and air your concerns.

Sounds like "Mindy" is probably already making a name for herself, I'm sure the boss notices her shortfalls.
I bet you have made a name for yourself by being the team player. It's okay that you're seething a little inside, you STILL did the right thing, and in the long run it will pay off.
Mindy won't last.
You did the right thing despite how you felt. Bravo!

If you really can't stay late then I would say I'm sorry, but I've already made plans for that evening and I'm not able to reschedule things on such short notice.
If you want to be the team player ask for your own day when you can leave early.
If you feel they might retaliate against you for saying no, I'd try to find another job.

You're going to be dealing with this kind of stuff forever.
All you can do is stop worrying about other people's work ethics and make sure that you keep yours in check.
If you help out your boss, she will remember it in the long run.
