The whole point of the "grindhouse" is to bring back the way they used to do it back in the day when they would show double features.
Now back then they didnt release them together, they were respected as seperate movies. Also the distribution finnancially would just be complicated between two differnt companys.
Im guessing this is partially the situation whith these two movies. Im also guessing as stated earlier by other answers, ther're just money sucking whores.
And yes they will be releasing them down the line, to again make sum of money, just as Mr. Tarentino is is doing with both Vol. of Kill Bill

Partially because it flopped as a double feature and outside North America they were released as separate movies, there is a rumour that in June 2008 they will release the Grindhouse double feature version with the fake trailers as they are no doubt losing money because of bootlegging.
