Those fat, belly protuding statues do not represent Buddha, they represent Hotei. Some say he was a chinese buddhist monk, other that he is only a representation of abundance.
For simplicity, they are marketed as Buddha, but they are not.
Actually, Chinese Buddha statues are very different, they are more related to the Indian style.

RE:
Why are most Buddha statues fat?
Siddhartha Gautama, the original Buddha was very skinny, and gaunt, as he fasted so much. So why are most Buddha statues fat?

Most Buddhas statues are fat probably because being fat was a sign of health and happiness. Because if you think about it, if you are fat you are probably well-fed, which was a sign of health and wealth. And if you are wealthy you are lucky, which probably explains why Buddhas are said to bring luck, which would bring happiness. It all comes together in the end. =]

because a fat smiling buddha is supposed to represent happiness, prosperity and a fulfilled life. Rubbing a fat biddha's tummy is supposed to bring very good luck.

His fat stomach, which protrudes from the robes he wears, symbolizes the largeness of his soul. It is also a symbol of happiness, luck, and generosity.
