Plug and screw is the best option, at least if the walls are particularly bad you can withdraw a screw and put a shim in behind it and rescrew to get a more vertical level surface to nail the boards to. Being a stone wall it would be very hard to nail battons to anyway, dot and dab is an idea, but not easy if your a novice.
hope this helps.

to fix the batons to the wall use screws and wall plugs spacing the batons at 1200 cm centres will be correct for plaster board to be screwed straight on vertically or 2400cm centres if you put them horizontally if the wall is very uneven use packers to keep every thing level once you have done the leveling nicely the job will be a lot easier

it depends what the 2x2 is being put up to hold.If its 4 plaster-board then u should screw and plug it,if its 4 very thin sheet material or 4 T and G then nails should suffice but even then i would use an adhesive like no nails as well.

What were you hitting? Most likely you bent it half way down the baton. BTW, a side handle baton is much more useful.

I would use wall plugs and screws, for a secure fixing.
Rule of thumb, your fixing, (screw / nail ) should be min 2.5 times the thickness of the baton.

Why don't you dot and dab it instead. Much easier! Use taper edged plaster board as well. That'll save you having to skim the whole wall!
