I saw a documentary on PBS about Columbus trip to new world. How did he know how much food and water to bring so in case try have to return there is enough ? PBS showed sailor diary that Columbus killed or hanged many natives that did not wanted to become Christian. How did they know to communicate if they did not know each other language ?

Columbus was gambling. He did not know how much food and water to take, so indeed he would have loaded all he could carry. Your communication question is a very good one. Initially there could only have been sign language. Over time they would have learned to communicate verbally, but concepts such as Christianity must have been very difficult to convey. How would the Spanish explain that they worshiped a man / God who was tortured and killed in a grotesque fashion? This would make no sense at first to the natives in the Americas.
