Sweet Potato Casserole
2 1/2 pounds sweet potatoes (about 3 large), scrubbed
2 large eggs, lightly beaten with a fork
3 tablespoons unsalted butter, melted plus more for the preparing the pan
2 tablespoons packed dark brown sugar
1 teaspoon kosher salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
Pinch of freshly grated nutmeg
Freshly ground black pepper
1/4 cup coarsely chopped pecans
Preheat the oven to 400 degrees F. Put the sweet potatoes on a baking sheet and pierce each one 2 or 3 times with a fork. Bake for 45 to 60 minutes or until tender. Set aside to cool.
Turn the oven down to 350 degrees F. Scoop the sweet potato out of their skins and into a medium bowl. Discard the skins. Mash the potatoes until smooth. Add the eggs, butter, brown sugar, salt, cinnamon, ginger, nutmeg, and pepper to taste. Whisk the mixture until smooth.
Butter an 8 by 8-inch casserole. Pour the sweet potato mixture into the pan and sprinkle the top with the pecans. Bake for 30 to 40 minutes until a bit puffy. Serve immediately.
Fresh Cranberry Relish
2 pounds fresh cranberries
1 cup sugar
1/4 cup Grand Marnier liqueur
1 orange, zested and juiced
Place all the ingredients in the bowl of a food processor, pulse several times to breakdown the cranberries and incorporate the ingredients; it should still be a bit chunky. Allow the cranberry relish to sit at room temperature for at least 30 minutes, so the flavors can marry.

My mom always had a delicious signature stuffing. It was a staple at our Thanksgiving dinners, as important as the turkey, really. Then last year she changed it and I was horrified at the idea....until I tried it! She always made her stuffing the same way, cube bread and dry it, sautee celery and onions in butter and a touch of garlic, combine and cook inside the turkey. This time, she added a bit of brown sugar to the sautee mix (just a little bit) and along with the celery and onions, she sauteed tiny chunk or apple and, I think, even added some apple juice when combining the celery mix with the bread. It was delicious! A little sweeter than normal, but it was a great mix with the turkey.
Also, if you're looking for an easy dessert for the kids to make, try made-from-scratch shortbread. Preheat your oven to 350', then wash your hands and get ready to smush! Combine 2 cups of flour, 1/2 cup of sugar and 2 sticks of butter or margarine. Get your hands in there and keep kneading until it's all mixed (using a spoon to do this is nearly impossible and not as much fun). Then lightly grease a baking dish, dump your mixture in and smooth it all out, then bake for 20-30 minuets or until the top just turns a light golden color. Take it out and use a fork to poke holes all over the shortbread, let it cool and serve in bars. It can be served plain, with jam or jelly, or lightly dusted with powdered sugar.

My favorite dish to make at Thanksgiving is Sweet Potatoes with Pecan Strussel Topping... SO yummy and a nice twist on traditional sweet potato casseroles.

Creamed Pearl Onions
INGREDIENTS
4 cups pearl onions
1/4 teaspoon salt
1/2 teaspoon fresh coarsely ground pepper
1/3 cup butter, melted
2 1/2 cups crushed buttery round crackers
1 1/3 cups heavy cream
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Place onions in a 2 quart casserole dish and season with salt and pepper. Pour melted butter over onions and sprinkle crushed crackers on top. Pour cream over crackers.
Bake in preheated oven for 45 minutes.

My mom makes these little sausage/beef party pizzas for Thanksgiving they are SO good, and go well with dinner.
1 lb Sausage
1 lb Ground beef
2 cups shredded cheese
Seasonings (basil, a little garlic salt, all season)
fry it all up mix in the cheese, then place scoops on little mini Rye Bread squares and bake for about 10-15 minutes till the bread gets crispy!
SOOOO good! Feel free to add your own spices...but def use the meat and cheese, and dress it up anyway you like!

Here is one I made several years ago, and I'm asked to bring it every year now. It's also very easy.
"Bar-B- Qued Green Beans" ( I know it sounds strange, but they are awesome!)
3 cans green beans (drained)
1 cup ketchup
1 cup brown sugar
5 slices uncooked bacon-chopped
1 onion-chopped
mix everything together in a casserole dish and bake 4 hrs at 350 degrees
Enjoy!

We toss the turkey out the window for the crows. Then we feast on a big juicy venison roast. At the first Thanksgiving feast, they had venison as well as turkey, so i wonder what fool would have kept that dry old bird as a tradition.

This sounds gross, but it is really good.
Cut cauliflower into bite size pieces, cook until just done. Don't let it get mushy
make a cheese sauce
like this one...

Put cauliflower in a 9x13 pan, put chinese noodles on top of cauliflower, , dump cheese sauce on top, bake until cheese gets bubbly.
