Medium well--with a small hint of pink. Grill on the BBQ, and season it w/ salt, pepper, a hint of garlic powder and butter good moments before removing to a platter. IMMEDIATELY cover seal the steaks in aluminum foil and keep it that way for about 10 minutes.
Sauces: Worcestershire is good. Teryaki gives it an Asian flavor. Hollandaise and Alfredo also work good too. I've found a mild Chipolte steak sauce that works too.

Before I joined the Navy, I like my meat cooked well done, with Heinz 57 steak sauce. Now, I like my meat marinated for at least 24 hours in a hickory smoke sauce, grilled medium rare, with no steak sauce. Oh, it has to be a charcoal fire, not propane. No self-respecting Southern cook would use propane. Do you think the Navy had a bad effect on me? Good Luck & Blessings

Medium Rare, a little 57 on the side. Though the best I had was stuffed with a nice garlic cream sauce.

I like it rare,
but cooked just a little,
so that it doesn't go,
"MOO" when I stick a fork in it.
I like it when it is almost raw in the middle.
I like it thick,
I want just a little bit of Sea Salt on it, too.
I used to eat steak tartar in
Germany, but haven't had that in years.
