I minored in history in college, but I'm not absolutely sure my answer is the correct one, but here goes.
There are two possible parameters with regards to an answer: numbers of total population(s) conquered, and/or land mass.
I would choose Genghis Kan's Mongolian empire, probably in both instances. But the Chinese empire under the Han would be a close second. These answers should be understood in a global context: the orient, the east, has always surpassed the Occident, the west. Even the Roman Empire at its height - the largest empire in the west both in terms of the numbers of people or scale of land mass conquered, was never comparable to those in the east.

The British Empire in 1922 under the rule King George V. It covered an area of more than 36.6 million km².

The Mongol Empire, comes in a not-so-distant second. It conquered all of Asia, some parts of Europe. It covered an area of 33.2 million km² under Khublai Khan in 1268. The Mongol Empire is considered the largest contigious empire, one where all parts are connected physically. The British Empire in 1922 was spread all across between the New World and the Old World.

If you mean the largest in geographical size, that's the USSR at the height of its power. That empire stretched from the Pacific Ocean all the way to East Germany. No other empire has spread further.

After that would be the Mongol empire under Kubilai Khan.

If you mean largest in the sense of largest influence on the world, I'd have to go with the current so-called American empire. American culture has spread to every part of the world now, there's no denying that. It's best demonstrated by the fact that the most understood expression, regardless of locale or nationality, is the American "ok."

The second most understood: "Coca-Cola."

The largest empire in history would have to be the British Empire, it held about 500 million people about a quarter of the worlds population in the 19th century.

Hellenistic (found by Alexander the Great)
Persian (I think this is basically the same thing as the Hellenistic Empire)
Roman
Byzantine (Eastern half after the split of the Roman Empire)
Holy Roman Empire (First Reich found by Charlemagne the king of the Gauls)
Arab
Mongol
British (I'm counting its overseas imperialism)
French (same here)
Bismarck's Second Reich (does it count?)
Third Reich (didn't really exist for a long time...)
United States (just kidding)

Erm... I would have to say the Roman Empire. They practically took over the whole Europe (almost) and parts of Middle East and Africa... but that was during its height.

The Mongol Empire... stretched over the known world at one time. It covered all the way from Europe to include the entire of China... it was a HUGE Empire and the largest in the world, in terms of land, that ever existed.

I would think it's either the Roman Empire or the British Empire during Victorian times.
