They do both! Aquatic plants, like all other living things, are constantly secreting waste, dying, and reproducing. When they die or release their waste, it decomposes, creating ammonia, then nitrite, then nitrate. Plants also remove this compound for use as fertilizer. Email me if you have any questions. Beware of terrestrial plants sold as aquatic plants, such as bamboo, mondo grass, and other plants that have thick, oily leaves. Terrestrial or bog plants will quickly decompose, adding ammonia, nitrite, and nitrate to the tank (all of which are toxic to fish) and leave unsightly water coloration.

LIVE FULLY AQUATIC plants will remove nitrate from an aquarium. Bamboo is not a fully aquatic plant, and will just foul up your tank.
