Any suggestions for a good 1 night trip within a couple of hours of Orlando that is primarily flatwater/Class I would be appreciated! For the most part the group is pretty inexperienced and will need to rent gear. Thanks!

Well all of the water here is flat as it can be.

One can Canoe from Wekiva Springs state park to Blue Springs State park on the Wekiva and St. Johns Rivers. The canoes can be rented at either place (Camping gear is another matter, but both parks have camping). This is a long trip (20 miles) but can be done in a day with an early start.

A shorter, easier option would be Blues springs State park to Hontoon Island State park on the St. Johns River. Again there is camping at either end. Hontoon has primitive cabins (but they are often booked). This route is only about 3 miles, but you can explore the Dead river on the west side of Hontoon. (The dead river is perfect for canoeing)

Another alternative is many of the one-way day trips provided by differnt vendors. They provide all of the gear and transportaiton back to the starting point. Juniper Creek, Wekiva River, Econlockhatchee, Rock Springs Run, Withlacoochee all have canoe operations. that do this.
