There is more than one way to say something in Latin, as with other languages. Depending on the sense of what you mean by stealth, your choice may change. Remember that when you are trying to say something in another language, it is not a word-by-word translation, but rather, an idea-to-idea correspondence, and such correspondences are rarely perfect, and can vary in nuance.
clam - stealth
furtum - a secret act
furto - by stealth
furtive - by stealth
clanculum - by stealth
astu - by stealth
tectus - hidden, undercover
clandestinus - stealth (adjective)

Above is about as close as I've ever seen an online translator get to a correct answer.
'Furtim' is close - it's an adverb meaning 'stealthily'
'Furtum' is the noun - stealth, trick, deception.
'Furtivus' is the adjective - secret, furtive, stealthy.
