If I am just smashing the hard boiled eggs I like mayonaise and a little mustard then put it between 2 slices of bread.

if I want to be more elaborate I will only use mayonaise and put avocado and swiss cheese on it.....

I am actually allergic to eggs now

When I loved them, I would mash slightly runny boiled eggs, with just plain old, Heinz Salad Cream.

Oh yes, I forgot the salt and black pepper.

I'm kind of neutral on egg salad sandwiches. But once in awhile I like them. I mash the eggs roughly and blend in a bit of Thousand Island dressing, instead of mayo. I also like to add in a bit of chopped onion (red onion is best), chopped celery and dijon mustard. I like it served on whole wheat, with lettuce and tomato.

Egg, pinch of salt, a little black pepper, finely minced celery, a little fat free (or regular) mayonnaise, bread.

Sometimes I add just a touch of finely chopped onion, if I have some onions leftover, but not usually.

smashed up hb egg, mircle whip, finely chopped dill pickle, finely chopped onion. Mix put on a croissant with lettuce.If I don't want bread it's really good on saltine crackers
