You can set a password to open a word document with:

Tools > Options > Save (Tab).

Your passwording options are set in here.

(Not applicable to 2007).

1) Finish your document
2) Click SAVE AS
3) On the top right of the Save As window, click TOOLS
4) Select SECURITY OPTIONS...
You should be able to set your password for opening and even modifying your DOC file

This feature works with Excel, too.

Click on "tools" then "options", then on the "security" tab.

BTW you could always click help and search on "password"!
