They're both retired now, but I saw a recent conversation between Terrell Davis and Curtis Martin, and they both sounded extremely intelligent and were very well-spoken.
Tom Brady is one who comes to mind of the current bunch.

In general, Offensive Lineman tend to be the most intelligent players on the team.
I also enjoy Dominique Foxworth's blog on the Denver Bronco's website. He's funny, entertaining, and seems understand basic grammer.

didn't Jason Garrett go to Princeton? Oh yeah, he's not playing anymore, if I remember correctly, I believe he's the quarterback coach in Dallas, but going to Princeton, ah well its an Ivy League school. I'm thinking for a quarterbacks coach, he's probably quite articulate.

I agree with Nate, Foxworth's blog is entertaining. John Lynch is also a pretty intelligent guy. As others have mentioned, offensive lineman are generally articulate.

Robert Smith formerly of the Vikings was probably the most well spoken, intelligent athletes in any sport. He left football after five years to pursue his medical degree.
