It sounds good only because I imagined Josh Groban singing this. Because I agree, Josh would sound perfect singing it.
"But now as the sky fades to blue
I hurt inside without you"
It doesn't sound like it'd fit. I mean, when the sky fades to blue, then it's going to be a clear sky with sunshine.
And you repeated "heart" too much. "Once" is the name of the song, after all.

It's well structured but not very deep. It will never be huge with the simple lyrics like that but it can be sung to an endeared friend or loved one and would be special to that person.

Well, it sounds like one of those songs the boy bands had hits with back in '99, so maybe it would be a hit with a band like that. Or Josh Groban, like you said...
