Probably depends on jurisdiction which you didn't mention.
But in general, avoiding bathrooms or other places where there is an expecation of privacy is required.
Beyond that, probably fine, especially if you notify folks with a sign once the cameras are installed.
Beyond that, if you are trying to build a case against employee theft or something like that, you are better to get legal advice to avoid evidence being non-admissible and to avoid violating rights that will get you in trouble.
Also, if you have performers, you may not be allowed to record them without their permission, so check with an attorney familiar with intellectual property laws if that is your concern.

as long as they don't record sound and are only videotaping public places on your property, you are fine. Don't put them in the bathrooms or employee dressing rooms, etc. It is illegal to record conversations that are not your own, which is why Kwikie-Mart and gas station surveillence you see on COPS is always just visual feeds, not sound feeds.
In all honesty, its not a bad idea to make the surveilence completely visible to your patrions and employees. Its a crime deterent. Its better to preempt the act then to try and catch someone afterwards. EIther that or make it known that you are installing, but dont' necessarily make ALL cameras visible. Casinos do that a lot. You can see all the obvious camera domes all over the ceilings and walls, but I guarentee there are three dozen more you don't see.
Oh, and of course it has to be YOUR club. YOu can't go around installing cameras on someone else's property.

Depends on the city, county and state. Basically, unless cameras are used for salacious purposes (bathrooms, showers, dressing rooms) there are probably no limitations, unlike say telephone monitoring where laws require that one or both people in the conversation be informed (1 in Texas) Most clubs with video monitoring would post signs to alert the bad guys.

You must have a sign telling people what goes on is recorded. Just like when someone on the phone tells you they are recording the call for quality control, it is because you cannot record even a phone call unless the people are aware.
This does not apply to personal cameras carried on a person.
