There are products made specifically for this. You need a product like Cabinet Magic or another product (usually sold at Home Depot or hardware stores) which is a 3 step process to remove the grit and grime, clean the wood and polish.
I'd also recommend you change out hardware. Its so time consuming to bring the luster back into hardware that you're almost better off changing it out. Knobs vary in price from $1-$5/piece and it will help to also update the look of the cabinets.

There is a cleaner called Greased Lightning. It works great to get grease off of kitchen surfaces. I've also had luck with the Mr. Clean Magic Eraser. Sometimes just Dawn dishsoap and really hot water do the trick (Dawn cuts grease on dishes, and works pretty well on surfaces too).

You can try cleaning an inconspicuous area of a cabinet with a solution of TSP. Painters use TSP to clean walls before painting and it will remove very stubborn buildups of grease, grime and smoke residue. You can find TSP in the paint sections of most hardware stores, Lowe's, Home Depot etc. Be sure to wear gloves.............this is tough stuff. It does not remove paint. Good Luck!

PKS's answer is correct, tri-sodium-phosphate, professional wall washers use it before painting. It definitely will cut the grease. Ammonia will do the same, but it is not as strong.

I had the same exact problem and I used Greased Lightning brand spray cleaner and it came right off. Spray it on and leave it a minute or so and then scrub off. !!
