The primary function of the red blood cells, or erythrocytes, is to carry oxygen from the lungs to body tissues and to transfer carbon dioxide from the tissues to the lungs. Oxygen transfer is accomplished via the hemoglobin contained in red blood cells. Hemoglobin combines readily with oxygen and carbon dioxide. Oxyhemoglobin in arterial blood reflects a bright red color while carboxyhemoglobin of venous blood appears dark red. To enable the maximum O2 saturation of hemoglobin, red cells are shaped like biconcave disks. The shape provides more surface area for exposure of hemoglobin to dissolved oxygen. Red blood cells are also able to change shape to permit passage through small capillaries that connect arteries with veins.
The RBC is a count of the number of red blood cells per cubic millimeter of blood. In response to hypoxia, the hormone erthyropoietin, secreted by the kidneys, stimulates the bone marrow to produce red blood cells. The formation of red blood cells is known as erthyropoiesis.

much more important than rbc count is your total hemoglobin level.
every human has a target hemoglobin level which the body tries to achieve, rbc count may vary according to the type of anemia, e.g in iron deficiency anemia, rbc count may be normal but ur hemoglobin levels may be low.
in cases of subclinical folic acid or vit b12 deficiency there may be low rbc count with normal hemoglobin levels.
so dear check ur hb levels. if they are normal, just enjoy.
in case it is less, go and get ur peripheral smear done.
if it is showing features of iron deficiency u require a diet rich in iron like, green leafy veggies, eggs, white meat, milk, jaggery,
in case it shows feature of folic acid/ vit b12 deficiency u require a diet rich in vits. which includes, milk, meat, eggs, etc.

To increase your RBC............here are few tips from my side...
-U can use iron utensils to cook your meal.
-Eat foods that are good sources of iron. Concentrate on green, leafy vegetables, lean, red meat, beef liver, poultry, fish, wheat germ, oysters, dried fruit, prune juice and iron-fortified cereals.
-Eat foods high in vitamin C, such as citrus fruits, tomatoes, and strawberries. Vitamin C helps your body absorb iron from food.
-If you drink tea, drink it between meals because the tannins in tea inhibit iron absorption. Alternatively, add milk to the tea - the calcium in milk binds with the tannins. (Herbal tea does not have tannins.)
-Take an iron supplement, but check with your doctor first. Note: Recent research is suggesting that high levels of iron in the blood may increase the risk for heart attacks.
Avoid antacids, phosphates (found in soft drinks, beer, ice cream, etc.), and the food additive EDTA. These block iron absorption.
I hope you will see results in a month as it takes almost a month for supplements to increase your Hb.

Follow exactly those guidelines, like.... enjoy a balanced diet "rich in green leafy vegetables",which will give you iron supplements .
The diet should contain essential vitamins and minerals also.
Personally speaking have "sprouts" also daily....

so cook food in BIG IRON vessels and also eat RED MEAT
