I have just started a photography course and need to know how to change the shutter speed and iris setting on my Sony DSC W55. I have looked in the instruction manuals and cannot find the answer - it automatically changes the settings and i need to be able to work it manually. Any ideas?

Your camera does not have Manual Mode so you cannot change shutter speed or aperture (aka f-stop).

If the handbook doesn't tell you how to do it, then it seems that the camera does not have a manual setting. Nor all automatic cameras do.
