If it's a TEXT document to start with, use the OCR (Optical Character Recognition) software the scanner came with (99% come with something, but if not GOOGLE for free OCR software) and then import to Word or similar.
Correct any spelling errors the OCR input (it's not 100% accurate) and then edit document.
If it's a handwritten one / image then photoshop or paint shop pro are the way to do it

It depends on what program you are scanning your document to. If your scanner has OCR (Optical Character Recognition) than you will be able to scan to Word or some other word processing program. In this case you can edit the document after you scan it because the scan will recognize each character (maybe not totally accurately, but it can do it). Otherwise you scan as a PDF (Portable Document Format) or an image. In these cases, you probably won't be able to edit without some knowledge of photoshop or another high end imaging program.

after you scan it you may not be able to edit the document in Photoshop - you may need a PDF Editor. PDF is popular because it is a universal file format and preserves the fonts, colors, layout and graphics of the program that was originally used to create it. If you don;t have the original document you can use a PDF Editor (sometimes) or OCR (sometimes) to bring that text into something like MS Word. The better programs are pay for use licenses so it may be worth it to you - I don;t know - but you can try searching on Download.com for one.

Yes, you have to download an optical character recognition (OCR) program. It recognizes the letter in the document you scan and converts them into real text that you can open with a word processing program and edit.
SimpleOCR is a free program I have used.
