I just made a pot of Chili, but for some reason, the flavor is not happening, does anyone have any suggestions?

Not sure what is in your chili, but try cumin, chipotles, and the adobo sauce they come in.

It is possible that you have never tasted athentic chili. It doesnt come in a can and most restaurants don't know how ether.
My advice is buy a chili mix. Carol Shelby makes a very good one. He is the first winner of a chili cook off. It is sold in almost every store. ( Wal Mart caries it) Real chili doesnt have beans nor ground meat. Stew meat is a good option. Oh and by the way chili isn't Mexican. It is Texan. Back in the day beef was very tough so long cooking was needed. Dried chilies keep very well so the cowboys used them for seasoning and so chili was born.

Chile powder, garlic, onions, serrano chiles, poblano peppers, salt and pepper, couple of cans of diced tomatoes, browned chuck, a dark beer (I like ***** Modelo) and believe it or not... half a plain Hershey bar.

Chocolate goes AMAZING with chile, and I find it works out better if you toss it in and let melt. Keeps people from giving you odd looks when you plunk a plate of mini Hershey bars on the table with the chili bowls.

That's what I put in mine, anyways. I don't really use a recipe either. I have a 5 gallon stock pot that I used to use for football Sundays... and I used to fill that thing to the brim. It can be sized down to just a largish pot if you want, but chile freezes well so don't be afraid to make a huge pot and eat it for weeks!

The first thought is Cumin. That is essentially the "chili" flavor.
As for additional ingrediants...you would want to add a variety of pepper and meat flavors. I won my most recent Chili cook-off by (a great recipe) and by adding many flavors. If I were to be chosen best answer I would give you the entire recipe. There is one secret ingredient that is obvious but noone thinks of that really makes the dish.
It's not:
Beer
jalapenos
wine
cayenne
or
meat.
My advice can probably (but not 100% sure) it can save your pot.

Have him prepare 2 batches of chili. One with just meat and one with just beans, then strain the liquid from the bean chili and add it to the batch of meat chili. You could also puree a small amount of the beans. Remove enough of the meat chili for yourself and add some of the pureed beans to the meat chili. I am guessing you don't like the texture of the beans, because if the beans upset your stomach or caused some other reaction, the liquid and bean flavoring would also make you ill.

Need more info, really. Good chili has: Ground cumin, real garlic, chopped onion, chili peppers to your taste (or hot sauce), and a little salt if needed. I like to add: diced tomatoes, sweet green peppers, a little celery, Lee & Perins worchestershire sauce, and I use both pinto and kidney beans.

I use lots of onions, garlic, lots of chili powder, cumin & hot peppers (chipole in adobo is very good), sometimes a little dash of cinnamon. Beer is a good idea too. So many things you can try with chili. Its fun to experiment with. Don't give up! Better luck next time!

we always use the chili kits from walmart and just add a little of the packets of paprika and cayenne pepper. When I fix myself some I add a little sour cream and tons of cheddar cheese on top :D My boyfriend puts pineapple pieces in his chili sometimes. It's really good. Good luck!

A couple of spoonfuls of powdered chocolate or squares of dark chocolate, melted and stirred in will amp up the flavor.

The tiny bit of sweetness will cut down on acidity and bring out the sharpness of the spices in the chili.
