I have seen a LOT of art in this style, I'm just not sure what it's called, or who any other artists are that do similar work. This is the best example I could find, by Sebastian Salcedo:

I could only think to really call it like "Catholic Art" or something?

It looks somewhat like Byzantine Art, or could also be local as in Mexican or South American styles of religious Art. But it appears to be more Byzantine in origin.

I would also suggest Byzantine art. you may also find some luck in searching for religious icons.

the artist you mentioned is from mexico. many italians and spanish cultures believe in catholicism so you may find luck with artists from those places also.

Iconography? Icons?

Though "Catholic Art" would probably work just as well in a search engine.
