When I was growing up back in the 60's, we had a little ice cream stand that had the best walnut sundaes. It was scooped vanilla ice cream, and whipped cream with walnut pieces on top. I don't know what the syrup was used on it. It was maple flavored, but was this a special syrup, or would this be a syrup like we use on pancakes? If it is, I believe it would be a good maple syrup brand. The syrup was warm, and it was sooooo good. Anyone that grew up back when these sundaes were popular that might have some input?

Maple-Walnut Syrup

For Thomas Padden, Greensburg, who wanted a recipe for walnut ice cream topping based on corn syrup or honey. From Mitz Kelly, Scottdale, who writes, "In my teenage years, I worked in a local drugstore that had a soda fountain. A maple walnut sundae was on our menu and was a favorite of mine -- and still is, 60-some years later. This recipe is as close to the walnut syrup that we served; I make it for myself and gift-giving."

* 1 1/2 cups corn syrup
* 1 cup pure maple syrup
* 1/2 granulated sugar
* 1/2 cup water
* 2 cups walnut pieces

In a saucepan, combine the corn syrup, maple syrup, sugar and water and place it over medium heat. Bring to a boil, stirring occasionally.

Maybe it was the real maple syrup instead of the imitation syrups that are out there now - like Log Cabin or Mrs. Butterworth, etc. There's nothing like pure maple syrup for pancakes or sundaes or even milkshakes. But it costs a lot to draw the maple sap and cook it down - I paid $75 for my last gallon of real maple syrup (light amber). But it freezes so I can take it out a pint at a time and then refrigerate the unused parts of the pint.

So use real maple syrup and add walnuts (maybe toasted) for your sundae.

Have you ever looked near the hot fudge, caramel, and ice cream cones? They have walnuts in syrup. It reminds me of what you are describing. Just heat it up before using it.
