Ghost, just so you an idea as I am typing this answer the Inmates from Unit 2 Alpha and Bravo and walking toward main line to have the first meal of the day. It is 6:20 am, main line open @ 6:00 around here unless we have fog line.
In the morning you can expert nothing more than a piece of fresh toast, a couple of fruits such an apple or maybe a pear but apples for the most part, and the mandatory cereal.
For lunch does not get any better, maybe a piece of chicken (those are the best days), tacos to make the hispanic inmates happy, and more fuits and beand some time.
For dinner hot dogs, a burger maybe, salad and of course more fruit.

I have never been to prison, but I know quite a few folks who have. And I know it depends upon the institution you go to. State prisons have less funding than Federal, so less $ for food. Cheaper less tasty meals. Some states have more funding than others. County jails have the least funding of all. Typical prison meal. Most prisons serve on a 3,600 calorie diet. Second are usually not an option. If you are still hungry hope someone sends you $ to purchase snacks from canteen. Often food is bland and generic, to cater to a lot of different people.

LIKE GOING TO A BUFFET DINNER.
EVERYTHING IS MADE FROM SCRATCH AT THE PRISON WHERE I WORKED. 1500 MEALS PER MEAL 3 X A DAY 6 DAYS A WEEK. SUNDAY AND HOLIDAYS ARE 2 MEAL DAYS. 1, 868,356 MEALS SERVED PER YEAR. SECONDS YES FOR THE LAST DORM EACH MEAL SO A ROTATIONAL ORDER OF FEEDING MUST BE MAINTAINED.
THE MENU IS A 28 DAY SCHEDULE AND HAS A 1800-2000 AND 2200-CALORIE MEAL TO BE SERVED. 1800 IS NORMAL, DIET IS 2000 AND DIABETIC IS 2200. DOCTOR PRESCRIBES WHO GETS WHAT CAL MEALS.
WE HAVE CORNDOGS, FRENCH FRIES, SPEGHETTI, MEATBALLS, RICE, MEATLOAF, CHICKEN, MEAT PATTIES, LAMB AND VEAL, PLUS FRIDAYS IS FISH DAY. THEN WE HAVE PUDDINGS, A DRINK, MILK, COFFEE, ROLLS, BISQUITS, CAKES CINNOMON ROLLS AND FROSTING OR SYRUP.
DOES IT TASTE GOOD YES. I AT THERE BECAUSE I WAS THE KITCHEN SECURITY OFFICER FOR 5 YEARS. EVERY MEAL WAS GOOD BECAUSE THE WARDEN CARED TO CHECK EACH MEAL OUT AND HOW IT WAS COOKED AS NOT TO BURNED AND NOT TO RAW. IF IT WAS NOT RIGHT THE STEWARDS WHO SUPERVISE THE MAKING OF THE MEALS GOT WROTE UP. IN THIS KITCHEN MEALS STARTED MAKING THEM AT 2AM AND ENDED DOING DISHES AND CLEAN UP AT 6:30PM. THERE WERE 5 SHIFTS OF WORKERS (108) INMATES WHO DID THE MEALS. MOST OF THEM TOOK A REAL PRIDE IN THE JOB THEY DID. SOME YOU HAD TO FORCE TO WORK OR WRITE THEM UP. AFTER A WRITE UP AND KNOWING THEY COULD DO SEG TIME FOR REFUSING TO WORK, YOU EITHER FOUGHT WITH THEM OR THEY BACKED DOWN AND RESPECTED THE JOB YOU HAD AND THE AUTHORITY YOU COULD WEILD WHEN NEEDED.
I ENJOYED WHAT I DID AND MISS THE INMATES SINCE MY RETIREMENT IN SEPT. YOU CANNOT HELP BUT BE A PEOPLE PERSON AND ALL GET ALONG INSIDE THE PRISON. THAT DOES NOT MEAN YOU HAVE TO BE LAX BECAUSE THEY WILL TRY TO GET ITEMS OUT FROM THE KITCHEN EVERYDAY TO MAKE PRUNO WITH. USUALLY BUSTED OVER 135 ITEMS A DAY AT THE SHAKEDOWN ROOM BEFORE LEAVING THE KITCHEN. MOST OF THESE WERE FOOD ITEMS SUCH AS YEAST, POWDER, EGGS, BISCUITS ETC. EVERY EGG SAUSAGE AND BISQUIT WAS EQUAL TO A BUGLAR AND CORNDOGS COULD BRING NAME PACK AND ON CHICKEN DAY A PIECE OF CHICKEN WAS EQUAL TO TWO NAME BRANDS. SUBCULTURE OF PRISON EVERYTHING HAS A PRICE. ONCE IN A WHILE A KNIFE WAS CAUGHT TRYING TO GO OUT IN A JACKET OR PANT LEG.

As with any medicine or diet change, you should discuss it with your doctor. Fruits, both fresh and dried, have a natural sugar in them that will raise blood sugar levels, so be careful about eating too much. Not sure about the nuts. Moderation is always the key. I've been diabetic for 18 years and just recently changed insulin types. I love it because it gives me more freedom in when and what I eat.
