These aren't exactly gourmet, but they will fit your prerequisites

shepherds pie
1 can beef stew
4 servings mashed potatoes (see box of instant potatoes for directions - for milk use 1/2 evap. milk & 1/2 water butter unnecessary)
1 can peas
1 can corn
Mix stew, peas and corn together in cast iron pan. cover with mixed potatoes. If possible cover and let heat over fire until bubbling. If avail. use foil to reflect fire heat to brown top
chicken tacos
(can use canned tuna but I don't like it)
1 can canned chicken
1 can salsa
1 can cheese (see soup section in store)
1 package corn tortillas
into taco put chicken, then salsa, then cheese. Wrap in foil if possible and put near heat source. Heating is a nice touch but unnecessary

whatchamacallums
mix canned beef stew with enough instant potato flakes to make a dough thick enough to make into balls. Fry in heated canned shortening in cast iron skillet. Don't forget to allow a little time for the flakes to absorb the liquid from the stew - it makes a difference.

spammy whammies
1 can spam
1 can hot chili peppers

cut spam into thick enough squares to fit on a forked stick without falling apart. Put sliced spam and a pepper on said stick. Heat over fire.

beans
open can (remove label)
put near heat source
eat

cocoa
premixed cocoa
evap milk (1/2 evap milk & 1/2 water)
heat together in pan
(if no cocoa, melt a couple of squares of choc in milk)

coffee
boil water in pan. add enough coffee grounds to fit amount of water (see can for directions). Let boil to desired strength. Drink
(warning: this kind of coffee can be pretty disgusting)

pancakes
2 1/4 C pancake mix
3 T sugar
1 can evap milk
mix to a medium thickness batter (add water if you need to thin) put in heated and greased skillet.
pancakes without eggs are okay, just a little crumblier
actually the above can be used for muffins or as a topper to heated fruit - just pour batter on top of fruit in pan and cover until done

If I can think up any more I'll add them on later

You can always make tuna fish salad out of canned tuna, mayo or Miracle Whip and pickle relish. Either eat as is or make sandwiches. Those are all non-perishables until opened. Or the good old peanut butter and jelly on bread (the bread will perish if left ther long enough or opened).

Ok - now that I have more info -- how about a nice fruit salad? Just combine various fresh and/or canned fruits and they should enjoy - or cook up some of the drained pineapple juice into a custard with an egg and some Cool Whip and fold that into the canned fruits. The cooked custard with cool whip, once it's been chilled to set it, doesn't have to be refrigerated for a few hours.

Ramen Noodle Stir Fry

Par cook ramen noodles. Do not add seasoning. Drain and add 1/2 the seasoning. add a little olive oil, and canned mushrooms and stir fry until the noodles start turning crispy and the mushrooms are hot and dark.
