Southern-Fried Chicken
1 3 lb chicken, cut up
1/3 cup butter milk
1/4 teaspoon freshly ground pepper
1/2 cup flour
1 teaspoon salt
2/3 cup lard
1. Combine flour, salt and pepper in a paper or plastic bag. Dip chicken in the buttermilk. Shake one or two pieces of chicken in bag to coat.
2. In a large deep cast iron frying pan, melt lard over medium-high heat to 375 degrees. I use the splatter test, put a little water on your fingers and flip it into the grease, when it splatters the heat is right. Add chicken pieces and cook turning frequently until brown and crisp, 20 to 25 minutes. Drain on paler towels

This is my first prize winning recipe for fried chicken.
Wash chicken parts well. Let extra water drain off.
Coat the chicken with Lawry's Seasoning Salt and black pepper. Make sure seasonings are all over but not on two heavily.
Heat your oil. There should be at least two inches of oil in your frying skillet or deep fryer. Do not let it get hot enough to start smoking.
Put some flour in a paper or plastic bag. Use plain white flour. Put chicken in the bag and shake it to coat all over. Fry chicken until golden brown.
When done, put chicken on a plate lined with a couple of paper towels so the excess oil will drain.
It's simple. I do not like egg or milk on my chicken because it makes it too brown too fast. You will love this recipe.

This is one of our favorites - so much easier than frying, but still has a crispy coating : )
Oven-fried Chicken
1 egg
1T water
--- Mix together in bowl
1-1/2 C Hungry Jacks potato flakes
1 t seasoned salt
1/2 t paprika
1/4 t garlic powder
3 T oil
--- Mix together in large bowl
~3# cut up chicken pieces (I use Pick of the Chix)
Dip each piece in the egg mixture, then coat all sides with potato flake mix.
Place skin side up in 13x9 pan. Pour/pat any extra flake mix over the chicken.
Bake 400º, 1 hr or till tender.

You'll need one egg whisked with a little bit of milk, flour, and bread crumbs.
Put each item in it's own dish. Set your skillet on medium-medium high heat.
Dip your chicken breast ( I like to use the thin cut), into flour (you can put whatever type of seasoning you want in the flour, I like salt/pepper and paprika), then dip it in the egg/milk mixture, then dip and roll in the bread crumbs. When you have a few already done, transfer over to the skillet, cook for about five minutes on each side. Then transfer on to a cookie sheet and stick into a 250 degree oven, let sit while you cook the rest of your chicken. This will guarantee that your chicken cooks evenly and will cook together, so no one gets cold chicken.

Mix flour, salt, pepper, and parsley flakes in one ziplock bag, and a little bit of milk and a beaten egg in another. Put the chicken pieces in the milk bag and seal it and shake to coat, then pull them out and stick em in the other one and shake to coat again. Throw 'em in the frying pan with some vegetable oil, and fry those puppies up!

EASY OVEN FRIED CHICKEN
1/4 c. butter
1 1/2 to 3 lbs. chicken pieces
1 c. Bisquick
Salt, pepper, and paprika
Heat oven to 400 degrees. Melt butter in shallow pan in oven. Wash and dry chicken. Put flour and seasonings in bag. Shake chicken pieces to coat. Cook, skin side down, in pan for 30 minutes. Turn and cook 30 minutes longer.

Fried Chicken ^^
INGREDIENTS
* 30 saltine crackers
* 2 tablespoons all-purpose flour
* 2 tablespoons dry potato flakes
* 1 teaspoon seasoned salt
* 1/2 teaspoon ground black pepper
* 1 egg
* 1/4 cup vegetable oil
* 6 skinless, boneless chicken breast halves
DIRECTIONS
1. Place crackers in a large resealable plastic bag; seal bag and crush crackers until they are coarse crumbs. Add flour, potato flakes, seasoned salt, and pepper to bag and mix well.
2. Beat egg in a shallow dish or bowl; heat oil in a large skillet over medium high heat.
3. One by one, dredge chicken pieces in egg beat, then place in bag with crumb mixture, seal bag and shake to coat.
4. Reduce heat to medium and cook coated chicken in skillet for 15 to 20 minutes, turning frequently, until golden brown and juices run clear.

mix chicken pieces in egg, seasoned flour and deep fry. mix chicken pieces in egg, flour, and panko bread crumbs. My favorite way to prepare fried chicken. When it's done squirt lemon juice on it. Believe me, it makes it more moist and delicious.
