Because your body will have a hard time digesting your food and you may have either heartburn or acid reflux from eating too close to your bedtime!

If you have Acid Reflux, it is to stop the acid from coming up your esphogus; causing a burning sensation in the chest (kind of like a heart attack feeling); and even a larnyx spasim which would cause you to suddenly wake and gasp for your breath.
If you do not have Acid Reflux, this is still a good idea. Though, 3 hours is more the normal. It assists your digestive system and doesn't put strain on the muscle that keeps the stomach contents in the stomach. You'll find, at minimum, the practice will help you loose weight (assuming you've been eating and going right to bed present day). It will also be a prevention method from obtaining Acid Reflux (the weakening of that stomach muscle that keeps the contents in your stomach and not flow back up the esphogus).

Your metabolism starts to slow down in the evening which means you are more likely to store food as fat during that time rather than burn it away.
