Well, I don't know if it's exciting, but what you can do is make tuna cakes, kinda like crab cakes. You drain a can of tuna real well, and mix in an egg white, some salt and pepper. You can also add finely chopped celery and onions, mix the ingredients together. Then form into patties, then press the patties into some breadcrumbs and pan fry with some oil until golden brown.

I like to top it off with spicy mustard or ketchup. Sometimes I top it with cheese and BBQ sauce..

This is pretty and tastes good too. Adapt to how many people you are serving, but this is for 1.
1 med/large tomato, top cut off and seeded

1 small can tuna - drained
1 t. chopped shallots
1 t. chopped celery
1 t. capers (optional)
1 T chopped olives (optional)
1 T Extra Virgin Olive Oil
1 T White Balsamic or Wine vinegar (taragon vinegar works great)
Pinch each salt and pepper

1 T grated parmesan cheese

Mix tuna gently with all ingredients execpt tomato and cheese, stuff tightly into tomato. Bake at 450 10 min, sprinkle on cheese, broil 2 min., watching closely, until cheese bubbles and just starts to turn brown.

Serve with crusty bread and a cup of consume or other light soup for a nice lunch or light supper.

Pour the tuna into a bowl, add some mayo, maybe some relish, if you like. Toast some bread, and spread the tuna over the toast. If you like you could add cheese, for a nice crunchy tuna sandwich.

In college, I used to live on a dinner of Ramen noodles, cooked to direction & then mixed with 1 can of tuna - drained well, 1 sm can of peas & carrots & a little sprinkle of garlic salt. Sautee in skillet w/ 1/4 stick of butter ( Yea, I'm from Ga, just like Paula Deen!) and salt & pepper well. Cook til noodles start to brown & serve with a slice of buttered bread or a good roll........Yummy, quick, & awesome comfort food!

Albacore Tuna and Artichoke Salad:
2 cups drained canned tuna
2/3 cup chopped artichoke hearts
1/4 cup sliced roasted red peppers
2 teaspoon minced lemon zest
1 teaspoon dried oregano
1 tablespoon chopped parsley leaves
Salt and pepper

Put it on the bread or cracker of your choice
enjoy!

This is very good:

SPAGHETTI BAKE SUPREME

8 oz. spaghetti
6 T. butter or margarine
2/3 cup (2.5 oz) grated Parmesan cheese (or can substitute part Romano)
1 large onion, finely chopped (7-9 oz., or 1 to 1+1/2 cups)
2 packages (10 oz. each) frozen chopped spinach, thawed
1 tsp. dill weed
1 tsp. garlic salt (or can substitute 1/4 tsp. garlic powder + 3/4 tsp. salt)
1 + 1/2 T. Dijon mustard
3 cans (6.5 oz. each) chunk-style tuna, drained and flaked
2 cups (16 oz.) small curd cottage cheese
2 cups (8 oz.) shredded Swiss cheese (do not use any extra Swiss, or the flavor will overpower the dish)
4 eggs, well beaten

In a 4 or 5 quart pan, cook spaghetti in 3 quarts boiling water until tender to bite (8 to 10 minutes). Or cook according to package directions. Drain well.

Melt 4 T. of the butter. In a large bowl, mix spaghetti, melted butter, and Parmesan cheese (and Romano, if using). Spread in a greased 9" x 13" baking dish; set aside.

In a wide frying pan, melt remaining 2 T. butter over medium heat. Add onion and cook, stirring often, until soft but not browned (6 to 8 minutes). Meanwhile, squeeze as much liquid as possible out of spinach; set aside. Stir dill weed, garlic salt, and mustard into onion mixture.

Remove from heat and mix in spinach, tuna, cottage cheese, and 1 cup of the Swiss cheese. Pour beaten eggs evenly over spaghetti and spread with tuna mixture. At this point, you may cover and refrigerate for up to 6 hours if you wish.

Bake, loosely covered, in a 350 degree oven until casserole is hot and eggs are set (35 to 40 minutes). Uncover, sprinkle with remaining 1 cup Swiss cheese, and continue baking until cheese is melted (about 5 more minutes). Cut into squares to serve. Makes 12 servings.

Heat the tuna gently in a frying pan with olive oil, oregano and tomato puree. Add some hot pepper sauce and stir it all up for a tasty meal with pasta and green beans. That's what I had for dinner yesterday.

my husband and mom also make this tuna ceviche thing. My mom uses the tuna and mixes it with diced tomato, onion, cilantro, and put some oil in there. then squeeze lemon on it and serve it with chips. It's great and pretty healthy too.

My favorite cream tuna over toast.

Cook a can of cream of mushroom soup (campbells) with a can of milk. Then mix in tuna and a small can of peas. Serve over toast yumm and quick...

Boil some pasta and add some sauce maybe something hot? then just put the tuna on the top

put it inbetween 2 slices of break with avocado and mayo and onion

hmmm, eat it by itself with biscuits?
