Totally Traditional Thanksgiving:
Waldorf Salad or Wild Lettuce with Dried Cranberries and Vinaigrette (the latter usually includes roasted pecans but you could leave them out)
Roast Turkey with Sage Dressing
Mashed Potatoes
Orange Smashed Yams
Turkey Giblet Gravy
Green Peas
Sherry-Creamed Onions
Dishes of pickled beet, figs, cranberry, olives and sweet pickles
Parker House Rolls
Pumpkin Pie with freshly whipped Cream

Well being from Georgia, we do a traditional dinner every year. Turkey & cornbread dressing, mashed potatoes & gravy, sweet potato casserole w/brown sugar & pecan topping ( if there is someone allergic to nuts, then you can do a cornflake topping w/no pecans), fried corn, squash casserole, baby peas, broccoli casserole, candied carrots, coleslaw, deviled eggs, cranberry sauce, ambrosia salad & fresh rolls. Finish things off with a couple of the following: Pumpkin pie, pecan pie, apple pie, carrot cake, or spice cake.

Edit: Oops I almost forgot my sister's favorite side dish - Homemade Mac & Cheese......My 84 year old grandmother always make this every year. It's yummy!!

Over-the-Rainbow Macaroni and Cheese
Recipe created by Patti LaBelle

Patti LaBelle says that the sure sign of a good cook is if their macaroni and cheese will make you cry! According to Oprah, Patti's version just might bring tears to your eyes.

INGREDIENTS
1 tablespoon vegetable oil
1 pound elbow macaroni
8 tablespoons (1 stick) plus 1 tablespoon butter
1/2 cup (2 ounces) shredded Muenster cheese
1/2 cup (2 ounces) shredded mild Cheddar cheese
1/2 cup (2 ounces) shredded sharp Cheddar cheese
1/2 cup (2 ounces) shredded Monterey Jack
2 cups half-and-half
1 cup (8 ounces) Velveeta, cut into small cubes
2 large eggs, lightly beaten
1/4 teaspoon seasoned salt
1/8 teaspoon freshly ground black pepper

Preheat the oven to 350 degrees F. Lightly butter a deep 2 1/2-quart casserole.

Bring the large pot of salted water to a boil over high heat. Add the oil, then the elbow macaroni, and cook until the macaroni is just tender, about 7 minutes. Do not overcook. Drain well. Return to the cooking pot.

In a small saucepan, melt eight tablespoons of the butter. Stir into the macaroni. In a large bowl, mix the Muenster, mild and sharp Cheddar, and Monterey Jack cheeses. To the macaroni, add the half-and-half, 1 1/2 cups of the shredded cheese, the cubed Velveeta, and the eggs. Season with salt and pepper. Transfer to the buttered casserole. Sprinkle with the remaining 1/2 cup of shredded cheese and dot with the remaining one tablespoon of butter.

Bake until it's bubbling around the edges, about 35 minutes. Serve hot.

Some people associate "green bean casserole" with TG, but it's not popular in my family. Instead, 1 bag frozen french cut green beans, sauteed in 1 T butter,
1 T minced garlic,
1 t sugar and
1/4 C slivered almonds, (I like toasted better than raw)
S&P to taste.
Sautee beans about 2 min, add garlic, sautee 2 more min., add almonds, sugar, salt and pepper. No need to add water, the frozen beans will have enough. Cover and remove from heat. Let sit about 5 min. (no more)

Dressed up corn
1 bag frozen corn kernals,
1 med. onion chopped, 1/4 celery chopped
1/4 C red bell pepper chopped
1/3 C butter cubed
2 T fresh minced parsley (flat leaf is best)
1 t salt
1/4 t. dried savory
1/2 white pepper
3/4 C sour cream
1 t fresh lemon juice
Sautee corn, onion, celery and pepper in butter until tender (about 5 min), stir in parsley, salt, svory and pepper, stir in sour cream and lemon juice. Garnish with fresh parsley.

Pumpkin Cheesecake makes a nice change from traditional pumpkin pie.

Serve some real cranberries. For my entire life I thought cranberries only came in a can and stayed the shape of the can when you took it out. Last year I made a delicious cranberry relish with real cranberries--it was a big hit. Cranberries are tart, so a little goes a long way with your turkey. Turkey (of course!), mashed potatoes and gravy, sweet potatoes, rolls, deviled eggs, vegetable tray, stuffing, and pies. I hope this helps but those are some of the traditional dishes served at my family gatherings.

Stuffing is KEY to Thanksgiving, if you ask me. You don't even have to bake it inside the turkey, just mix it up and bake it in a casserole dish, if you want a vegetarian option.

There's an easy sausage-cornbread stuffing (very traditional, super easy) at:
