My family eats a lot of chicken breast. Their favorite is chicken cutlette or just baked with BBQ sauce.

I want to try something else but I'm not sure what to try.

Do you have any ideas on how else to prepare the chicken?

i like to use the zest and juice of a fresh lemon in melted butter, i brush that on the chicken and bake it.

honey glazed carrots go real nice with it. the honey and lemon compliment each other

Have you ever tried stuffing a boneless breast? Take the breast and cut a "pocket" into the thick side, don't poke through the other side, but make it long and deep. You can stuff it with almost anything. Swiss cheese and ham for Cordon Bleu, marinara sauce, pepperoni, and cheese, bacon and cheese to name a few. Once you stuff the breast, dredge in flour, shake off the excess. Dip in egg wash, then seasoned bread crumbs. Lightly saute in olive oil, then finish in the oven.

Here are my best two stuffings:

Spinach, cheddar cheese, bacon, and artichoke (canned artichoke hearts). Chop all ingredients and fold together, then stuff. It is just like the spinach artichoke dip at TGI Friday's but in a piece of chicken!

Roasted red peppers, green olives and smoked mozzarella cheese.

This isn't a very exotic chicken recipe but I like it. Just get some McCormick brand "Garlic & Italian Herb" blend. it's got it's own juice and comes in a small jar. I take it and mix 1-2 teaspoons with some melted butter. I then take the mixture and brush it over my boneless/skinless chicken breasts, then put them on the grill and cook them slowly, brushing more over the chicken as it cooks. It gives a hint of garlic and italian seasoning to the chicken.

I just bought a cookbook 101 things to do with a crock pot and made a dish last night that I was not sure of but my family loved. Use a bag of hash browns, cook you chicken and break into pieces, add a can of cream of mushroom, 4 tablespoons of minced onion, pepper, 1 cup Ritz crackers, and cheese grated. Mix together leaving half of crackers out and cook in crock pot on low for 4 hours, the last hour add you crackers and cheese to the top. Surprisingly it was really good!

Put the chicken breast between two large pieces of cling film them pound it with a rolling pin/something hard and heavy until it is *very* thin. Salt, pepper and lemon juice the whack into a very hot griddle pan. Cooks in a flash due to how thin it is and can be eaten as part of a main meal or in a sandwich/hot baguette.

I love to buy chicken breast, they are cheap (at least at my local grocery store), and they taste great!

I blend bread crumbs and some Parmesan cheese together and I use it to bread the chicken breast. But first I marinate the chicken in Mustard, garlic, olive oil, cilantro, and a very little bit of vinegar. then I bread it with the mixture of bread crumbs and I bake it for 35-45 minutes on 375.

If they like it with BBQ try cooking it on the grill. When it's done top it with your favorite BBQ sauce, two pieces of cooked bacon, and shredded cheddar cheese and place in the oven on broil till the cheese melts and it's ready to eat.

Another easy one is to brown your chicken breasts on both sides in a frying pan, add one can of cream of chicken soup, cup of sour cream, and cup of salsa, and just a little water. Simmer in the pan covered till the chicken is done and eat. It's great with Spanish rice.

2 1/2 to 3 lb. chicken
1/4 c. oil
1/2 c. onion, chopped
1/2 c. green pepper
1 can mushrooms, drained
1 (1 lb.) can tomatoes
1 tsp. curry powder
1/2 tsp. salt
1/4 tsp. Tabasco
3 whole cloves
Chicken may be breasts or thighs or a whole chicken, cut into parts and skinned. Brown chicken in oil. Remove meat from skillet and set aside. Saute onion, green pepper and mushrooms in skillet 3 minutes. Add tomato, curry, salt, garlic, Tabasco, cloves; stir. Return chicken to pot; cover. Simmer 30 minutes or until chicken is tender. Serve with green vegetables and biscuits.

Trooper_Cobb easy chicken....

Coat a Pyrex dish with Olive oil... Layer the bottom of the dish with sliced onions, lemon slices (with no peels) and chopped garlic (to your taste)

Grind sea-salt over the top of the chicken.

Securely wrap tin foil over top to retain moisture.

Place in oven at 350 degrees until done. (90 minutes to two hours depening on size of chicken and temperature going in.

Serve with some steamed veggies and/or rice - very tasty.

I find the frozen bags of boneless/skinless chicken breast are great to work with

I dice boneless/skinless breast, put in a hot skillet with some olive oil and garlic, when the pink is gone, you can add in any veggies you like and some al dente pasta, toss and heat through. You can add a jar of al fredo sauce if you like.

Dice it up, when pink is gone add a packet or two of taco of fajita seasoning, you can add onions and peppers if you like, serve on warm tortillas with your favorite taco toppings.

You can put some olive oil and spices on them, wrap a piece of bacon them, put into a pan and bake in the oven. Serve with rice mixed with a can of Cream of Chicken Soup.
