Monosodium glutamate is commonly known as MSG. It is often added to foods as a flavor enhancer; it adds a taste sort of like salt. Many people are afraid of it because there are rumors that MSG may cause cancer, although it has been approved for use by the FDA.

If you'd like to know more, I suspect Wikipedia has an article on it.

Monosodium glutamate is a flavor enhancer. Its original use, I think, was in Chinese food (it is in high concentration, for example in Chinese soy sauce), but it is widely used in many prepared foods sold in the U.S.
The first company to sell it commercially, though, was a Japanese company called Ajinomoto. In the US they sold it as Accent (still available today). Its status is that it is on the GRAS ("Generally Regarded As Safe" of the FDA, but some people may be sensitive to it, especially in larger quantities.
