Are you plannig this for the ceremony or the reception? Unless there will be a live band please skip the reception karaoke.
If this is for the ceremony, please speak with the accompanist. There is no use choosing something that they are not familiar with and won't be able to play. Also you should ask your Mom. After all is it up to the bride and groom to pick the music for the ceremony.
The most popular selections are:
Ceremony Song Choices
How Beautiful - Twila Paris
The Wedding Song - Paul Stookey (good for harmony very traditional)
Wherever You Go - Weston Priory/Gregory Norbet
Covenant Hymn - Gary Daigle
Beginning Today - Darryl Ducote
I Am Here - Steven Curtis Chapman
One Hand One Heart (from West Side Story)
Let there Be Peace On Earth - Jill Jackson/Seymour Miller
The Prayer - David Foster/Carol Bayer Sager (recorded by Andreas Bocelli and Celine Dion)
Where There is Love - David Haas
You Raise Me Up - Rolf Lovland & Brendan Graham

I think that the "Christmas Song" by Nat King Cole will be appropriate for the occasion, it's the season and is a beautiful song. My son sang this song for a special person in our lives, he surprised the person.... it was in church.. for our pastor's wedding anniversary and he loved it. I'm pretty sure that you waited till the last minute perhaps you didn't want to deal it or just because it's hard for you to see mom getting married. But what ever you reasons to wait 'till the last minute is ok - the show must go on!! Break a leg!! Good luck and best wishes at your mom's wedding.

If you're singing to your mother personally - "You raise me up" (Josh Groban). There are too many choices to list if you're singing something romantic to the couple.
