I have a recipe that calls for fresh cilantro but I don't use that much. If I freeze it, it just turns into mush when it thaws.

Use coriander seeds instead, slightly crushed in a mortar. You may also, roast them slightly -in a tefal pan or under grill- before crushing. Delicious..

Coriander is the seed. Cilanto is the leaves. You don't want to substitute coriander for fresh cilantro, you substitute dried cilantro for fresh cilantro.

And if you don't use that much, just start a pot of it on your windowsill, and use it as you need it.

Dried herbs are never as good as fresh, but yes, it's a good substitute.
