Davlaw is right, but you also have the option of merging specific cells, if you only want one large cell and don't want to change the size of all the others. Depending which version of Excel you're using, select the squares you want to join together, right-click the cells and select 'Format Cells' if it comes up, otherwise you should find the command on the Edit menu, if memory serves correctly. From this menu you need to select the 'Alignment' tab, then you will have a little box you can tick, near the bottom, that offers to 'Merge Cells'.

Be warned, this may mess up any formulas using this square, although it is useful for design purposes.

Well, you can just use the mouse to 'grab' the lines either side of the column in which the cell currently sits, then 'stretch' them out so the cell (and all cells above and below it) is wider.
Or you can right-click the cell, go into properties and tick the 'wrap' option to flow the text over several lines.
