You could make an entirely fruit based compost or organic fertilizer by vermiculite, or worm composting.
Worm composting is a method for recycling food waste into a rich, dark, earth-smelling soil conditioner. The great advantage of worm composting is that this can be done indoors and outdoors, thus allowing year round composting. It also provides apartment dwellers with a means of composting. In a nutshell, worm compost is made in a container filled with moistened bedding and red-worms. Add your fruit waste for a period of time, and the worms and micro-organisms will eventually convert the entire contents into rich compost.
As to the advantages of a fruit based organic fertilizer, I think you know the advantages of organic fertilizer over conventional fertilizer. I don't know that the organic fertilizer made from fruit would have any advantage over one made of all other types of garbage. It would be a good way to dispose of a lot of old or bad fruit. If you were planning on selling organic fertilizer, an all fruit based worm castings might have a better sound to it than garbage based worm castings. That may be the best advantage, advertising. Any organic fertilizer does not have the heavy metals in it, this means less heavy metal build up in the soil and the water table as well. Also they mite let the soil heavy metals balance go down, which would improve the overall soil condition for plant growth. Plus the organics will help absolve more water, feed worms that help soil condition, and they brake down more slowly than chemical fertilizers do, so they will not burn the plants as man made fertilizers do.
