You can cut the pitas in half & fill fresh or toasted pitas with salads or regular sandwich fixings. Cut into 1/6ths brush with oil and toast in the oven and use like a chip with a dip such as white beans pureed with roasted garlic, a little olive oil, salt and pepper. Make a garbanzo bean dip and make a sandwich out it with some yogurt, cucumbers, tomatoe,olives and onions.

you can make different things, anything you want.
One idea is to fill it with chicken and veggies. For example if you have chicken leftovers chop everything add grilled veggies to your taste or instead add the following (all chopped to fit better into the pita bread) ham, cheddar, cooked chicken, sweet red and green peppers (raw), tomatoe if you like, lettuce, cucumber (or any veggies of your taste), mayo and mustard, mix well open the pita bread and fill it in. You will love it. It is like a sandwich.
Or make a filling like for a meat pie with ground meat (Beef, pork or chicken or combination of them), put plenty of chopped onion and fresh chopped cilantro in the filling to make it arab style (where the pita bread is originary from), once ready squeeze some lemon juice over it, fill the bread with it and put it in the oven to grate for 5 mins and to heat the bread if you like or just eat it like that.
You can fill it with anything you like. Sky is the limit.

here is something 'fine' restaurants do.
put virgin oil on a plate - pour balsamic vinegar in the middle.
now tear up the pita bread and dip it into the mixture...
makes a great appetiser or filler.

hmmm
falafel and salad
cut them in half and use them as pizza bases
in fact fill them with any thing you like.
grill them for a few minutes. when warm they rise slightly and you can cut them in half to get two little pockets to fill or slice them long wise to make a big pocket
