I haven't come across any of my PS2 games that wouldn't play on my 60GB version of my PS3. Here's the caveat to that, the 60GB has hardware backward compatibility, whereas the newer 80GB uses software emulation for backward compatibility which has more issues with PS2 games.
As far as the GB size you get that is the only thing that matters is getting the hardware backward compatibility vs. the software emulation. Keep in mind that in the manual it shows you how to upgrade the harddrive on the PS3, it's a standard laptop hard drive in those machines, no expensive Sony only brand drive or anything like that.

NTSC 60GB and 20GB versions are compatible with almost all of old games (there is a piece of hardware for that). European 20GB, 60GB and both NTSC and PAL 80GB versions are compatible with (approx.) 80% of games (they run old games on software emulators). New 40GB version isn't compatible with old games at all.
HDD can be easely changed with any 2.5" SATA 5400 RPM HDD (same used in laptops) - 250GB'll cost you around 170$.

this site will give you a playstation 3 just for completing some quick online tasks! really recommend it, especially if you're broke but really want a ps3 (like me).
