The Nikon D40 has been replaced by the D40x which has 10mp. Auto focus with either of them requires Nikon AF-S or AF-I lenses since there is no AF motor in the body. The D40x would be the better choice.
The Pentax K100D has been upgraded to the K10D which has 10mp. Both have the AF motor in the body and in-body Image Stabilization. The K10D would be the better choice.
The Canon you reference has 8mp and requires lenses with Image Stabilization since it isn't built into the body.

I have the Pentax, however, to make it a fair comparison, the other cameras are equivelant to the Pentax K110D not the 100D. I LOVE the pentax especially because I can use ALL of my old lenses from my K1000 Manual SLR which you can't do with other models. The Pentax also has a innovative Shake Reduction System (Almost ALL of the Pentax reviews on the net show a pic with it on and with it off so that you can see how well it works), intuitive controls, point and shoot features that are normally absent from DSLR's, takes SD cards, can run on AA batteries (works GREAT with Rechargeable AA's - I use Kodak brand), is light and versatile. The design is also very intuitive, it just feels right in your hand. The quality of the photos are excellent, but I do agree with a previous poster that it also depends on WHO is using the camera. The ONLY thing that could use improvement is the flash (I use a flash hood indoors). MY suggestion is that you go to a camera store in your area (ex. Ritz Camera) and hold each in your hands. See which feels right and which has controls that you feel are easiest to get used to.

I like the canon
All of the major brands are good. Choose a brand that appeals to you. Then you have to think about getting a spare battery, what size memory card, if you want an extended warranty, how much you can afford, what size zoom, if you want manual controls, the size of the camera, finding a reliable place to purchase it, and the list goes on and on and on.......
The first thing to realize is that almost any digital camera will take good pictures. If more people would read the manual more than once, they would be able to take better pictures. Usually, the person assumes it is the camera when it could be them not knowing exactly what to do. Just give yourself more photographic knowledge by doing more reading on the internet.
I really believe buying a camera is an individual choice.
The person needs to read alot of reviews on cameras so they can decide on the features that they really want and need.
Go to the store and hold them so you can see if they feel comfortable in your hands. If possible, take some pictures in the store to check the quality of the pictures.
I can only give a suggestion of what to look for in a new digital camera.

These cameras are running side by side with their counter parts (and have not been replaced yet as previously indicated)
I like pentax due to metal mount kit lens, in body stabilization, and the most compatibility with lenses from pentax's entire line.

Not familiar with the Pentax
The Nikon uses a diffusion algorithm that gives nice color saturation but weak border lines, hence text is a little dithered and blurred
The Canon uses sharpening algorithm which makes the borders and text sharp, but mottles solid colors and makes them look spotchy at high crop magnifications.
