I know deep frying is the biggest method, but please be specific on breading method, etc.

The best way for catfish by far is frying, the secret is in the breading or batter. My favorite way now is to use Butter Milk instead of eggs. Season some flour with what ever you like, salt, pepper, garlic powder, chili powder, get creative. Lightly coat the fish with the seasoned flour mix. Place the fish in plain Butter Milk, then back into the seasoned flour, or you can use a flour and corn meal mix, or I like Italian bread crumbs as a top coat. Fry in vegetable oil until golden on both sides. The only draw back is that the batter sometimes does not stick as well as using eggs, try to only turn once. This also is a good way for breaded pork chops and chicken fried steak.

Southern Fried Catfish

1 1/2 cups Yellow Cornmeal
1/4 cup All-purpose flour
3 tsp salt
1 tsp Ground Red Pepper
1 tsp Garlic Powder
1/2 tsp Black Pepper
8 catfish fillets
Vegetable oil, for deep frying

Mix cornmeal, flour, salt, red pepper, garlic powder and black pepper in a shallow bowl. Dredge catfish fillets in flour mixture, shaking off excess.

Fill a deep fryer, or large deep skillet half full with oil and heat to 375 degrees. Fry fish 3 to 4 minutes on each side or until golden brown. Drain on paper towels.

Deep frying is the way to go, but I like this pre-mix just add water, it'll put Long John Silvers out of business if everyone knew about it
How do I know about it? I grew up not 20 miles from where it's made. They have lot's of products including a hushpuppy mix too
I know it sounds like a comercial, but try it, and you'll agree st least check out the website

Mix eggs, milk and pepper together and dip your fish in. Then roll it in some Drakes (if you have it where you are from).
I always use the cheapest grease I can find and deep fry my fish in a cast iron pan. I like the grease extremely hot--put the fish in till very lightly brown, turn over and brown. Salt while hot.

Cat fish is delicious..Just dip it in egg and then(4C) seasoned bread crumbs, and sprinkle it with a little red hot pepper or Chili power and Garlic power.Fry in hot olive oil(mixed with a cup of Wesson vegetable oil)..don't ruin it by using cheap oil)..Enjoy!

PS..as a side dish.. you can make one of the delicious Goya (found in the ethnic part of the store)rices, and a nice vegetable on the side..Yum!
Olive oil can be a little expensive..but it's healthy, and doesn't leave a greasy taste on your food!( keep it in the house..and use it on salads as well..look for Extra Virgin Olive Oil)

Pan-fried in peanut oil is excellent.

BUT, You ain't lived til you had some Blackened Catfish. MIGHTY good!
