Well traditionally you would pick or the other, though in my family tradition, its looked down upon to have a Matron of Honor. Weird, I know.
Typically I think at the US average age of marriage for a woman (24-26) most of ones friend's would be of the same age and likely to not be married so it would make it easier statistically to end up with a Maid vs a Matron. The difference between the two is just that one is married and the other isn't so I mean its really your call.
You could always have a Matron of Honor and put her responsible for arranging a lovely afternoon bridal shower and then have a Maid of Honor arrange a rocking bachelorette party. :)
Remember though how tacky it looks if you have way too many maids in your line for the ceremony ::shakes w/ the willies::

Yep. The Matron of Honnor is Married and The Maid of Honor is single.

No, there is ONE position. A Maid would be single, a Matron, a married woman. The others would be bridesmaids.

Yes you can have both. I was at a wedding a while back and the bride's sister was her Maid of Honor and her Best Friend was her Matron of Honor (she also had 3 Bridesmaids, I was one, and a Junior Bridesmaid).
The Groom can only have one Best Man

You can do whatever you want--it's your wedding!
Usually though, there is one female at the altar with the bride, and if she's young, she's the maid of honor, and if she's not young, she's the matron of honor.
That said, I always like to see the rules broken . . . . .

It is your wedding. You can have what you want.
You can have 1 of each, a maid of honor and matron of honor. Or you can have as many as you want.

I had a "Man Of Honor" and hubby had a "Best Woman."
Just be aware that only one of them can sign as a witness on the marriage certificate. There is only space for one and they are standardized as far as that goes....So you will still have to pick one over the other for that.
