I have a pkg of boneless pork (not sure of the cut at this point, but its not a roast) and I was wondering if these could be cooked in a crock pot, with potatoes and such, like a roast?

It should cook just like beef chunks or pot roast fine.

Here's a recipe that I make for my family and they love it.

Crock-Pot Pork Chops & Potatoes

1 pkg. boneless pork chops
2 cans Campbell's Cream of Chicken Soup
Flour
Cooking Oil
Salt
Pepper
Potatoes

First, dredge the pork chops in flour, place in frying pan with cooking oil, season with salt and pepper and brown on both sides. Pour one can of soup in bottom of crock-pot, put in the pork chops and pour in second can of soup. Place potatoes on top and cook on HIGH for 4 to 5 hours.

Yes, what you describe sounds like a pork tenderloin and you can cook it a variety of ways -in the oven, or in a crock pot. They are delicious.

yes they can but I would flour it on all sides and brown it in a little oil before i put it in crock pot. good luck .

Sure, go for it. But for a twist, use sweet potatoes,and onions.

sure will.... you should inject it with marinade and let it set over night, evenif its just melted butter and spices, it will make it so juicy and flavorful!! but make sure you chack it to make sure its completely done, raw pork is no joke!! good luck and enjoy!!
