and it was delicious. The lady who made it is funny about giving out HER recipes so my friend told me not to ask. Thank you for your help.

Even if the lady is "funny" about giving out recipes, she might be flattered to know you enjoyed it enough that you'd like to make it. Why not ask her anyway!?!

It could be that she doesn't really have a recipe for it; she just makes it the way she always has. My mother and grandmother and myself rarely use(d) recipes (other than for baking) after we've made something a few times. It's sometimes difficult to tell others what quantity of ingredients go into some of my dishes, but I do try. I always take it as a compliment that someone wants my recipes.

Sounds delish.

My mom used to make the peppers stuffed with rice in the meat,,, I personally slightly brown my meat and I use instant rice. I think using the pressure cooker helped her cook the rice... which I dont use.

She used to cook the stuffed peppers in a can of spaghetti sauce. [in the pressure cooker] and added the rice to the sauce too.

Or you could experiment and make the stuffed peppers first [adding garlic, salt, pepper, basil etc] in the oven, remove them and then simmer them [lowest setting] in tomato soup after the peppers are cooked through. Simmer it for about 45 minutes more or less til the peppers are soft and the meat is moist.

Add rice or whatever you like in the simmering process but use instant. Or cook rice seperate and add into simmering process.

Now I am officially hungry.

It's fun to experiment.
