Ears back:
This can mean one of two things: If your cat's ears are back and her posture is steady, she's taking stock of her options and preparing her next move. But if her body is low to the ground, she's probably guilty of mischief-better check to see if the curtains are tattered or the sofa is scratched to bits.

Cats may not be able to speak English but they do have many other ways in which they can 'talk' to you. Cats are cognitive animals, they solve problems just like any other highly developed species. Cats can and will communicate with you if you allow them to express themselves, talk back to them and try to understand what they are saying. Learn what your cat's different signals mean so that you and your cat can communicate regularly. This will not only improve the bond with your cat and keep your cat happy, but it will also allow you to better read your cat's signals so you know when your cat wants to play or just wants to be left alone!

Cats ears are another way that a cat expresses his/her emotions:
-- Ears pointing forward and slightly outward - your cat is relaxed and happy.

-- Ears very straight up and forward - your cat is listening to something that is intriguing.

-- Ears twitching nervously - your cat is agitated and nervous.

-- Ears flat against the head - your cat is frightened and may attack (this is instinctual as to protect the ears during a fight).

-- Ears back or in between alert and defensive position - your cat is aggressive and may attack.

When groups do trap-neuter-return (TNR) they trap the cats, spay/neuter them, and then tip the ear - take off a small piece. This way the trappers know if a cat has already been "fixed" so that they don't take the same cat in again to be spayed. Cats with notched or tipped ears are just released from the trap, cats that do not have a notched or tipped ear are taken in to be altered.

It sort of depends on the situation. When I'm giving my cat a very pleasant ear rub, he sometimes puts his ears flat against his head. If this is not the case when your cat has her ears back, she's probably very very agitated. Sometimes my cat will do it when he's having one of those "mini seizure I'm going insane and running all around the house" moments but that's when he's feeling playful. So...watch her other cues. If her tail is twitching madly she's probably pissed off. Best to leave her alone at that point.

What are you doing specifically that causes this behavior? Are you holding her and not letting her down? Are you rubbing her tummy or petting her near the base of her tail? Cats have a large cluster of nerves near the base of the tail that can cause them to react negatively when you pet or scratch near that region. If she has her ears flat, and there is an ominous rumbling or growling noise coming from her, put her down immediately and walk away. If she bites or scratches you, put this down to "lesson learned" and try to remember the behavior that caused her to act this way. If you're playing with her and all of a sudden she attacks you, pull away your hand, blow in her face and say NO! very firmly. Then put her off your lap, and let her cool down. She will come back eventually and if you forgive her, she will forgive you.

1.You have really ticked off your cat.
2. The cat is unhappy about something or someone in the house.
3. She is in attack mode.
4. She is not happy with you, another cat, another child, your spouse, the dog, the new refrigerator is making a strange noise, there's a mouse in the house, she sees a bug, etc.
5. The baby bonnet that you put on her is just a bit too tight.
6. Kitty is not happy that you have dressed her in doll clothes.

Cats do that when they feel threaten like when they hiss they will make there ears go back or they might even do that if they get scared like if something swings past their face

When dogs and cats put their ears backwards, I believe, they are regretting for some mistakes they have committed, some wrong deeds done and they I are requesting you to pardon them. It is their way to express regretful acknowledgment of an offence or failure.
