We live in a middle class suburb. The crime rate is very low... Yet ... we wake up and our inflatables are gone. Kiddies are upset too. Any ideas?

Airborn inflatables as in for the pool, decorations?
Is there a fence around the property?

Video camera running overnight to catch the perps,,,maybe, a outrageously loud and obnoxious alarm attached to them to scare the fritos out of them when they try to obscond with your inflatables...just a thought. I like the guard dog angle, too.

buy some cheap inflatables to be sacrificed. put your good ones away, but leave the cheap ones out, coat them with a poison that absorbs quickly through the skin, wear suitable gloves to protect yourself when handling

lock them in a shed, get a pivacy fence, take them inside, maybe even hide them under you porch if you have one
